How is the terminal node showdown utility calculated in a CFR algorithm with bucket abstraction?

Do you sample a hand at each iteration for each player and just sets, utility = the pot for the winner.

Or do you sample a bucket for each player, and sets the utility to the average that bucket will win against the other bucket, times the pot?

sort of depends on how you calculate the terminal node FOLD utility
